Saffron plumcake

Plumcake, a simple, soft and delicious dessert that can be enjoyed for breakfast or as a snack or whenever we feel like a sweet break.

In this version we used Saffron in Chianti Pistils to flavor and give a different character to our Plumcake, and we must say that the result was truly exceptional!

To make this quick and easy recipe we will only need a bowl and electric whisk to prepare the dough, and a plum cake mold, we used a 30 x 10 centimeter one to bake our dessert.

Ingredients:

3 whole eggs
300 g of 00 flour
180 g of sugar
80 g of melted butter
1 organic lemon
50 ml of milk
8-10 saffron pistils
20 ml of water
a pinch of salt
1 sachet of baking powder (16 g)

We begin the recipe by taking the saffron pistils, placing them between two sheets of baking paper and with light pressure we reduce them to powder, then we put the saffron powder thus obtained in a glass with 20 ml of hot water and let it rest for at least 20-30 minutes, stirring occasionally.

We divide the egg yolks from the egg whites and whip them until stiff, adding a pinch of salt.

We beat the egg yolks with the sugar and when they are foamy we add the milk, the melted butter, the juice and the grated peel of an organic lemon, continuing to mix, then we add the flour little by little, the yeast and the beaten egg whites, stirring gently from top to bottom.

Finally we add the 20 ml of water with the saffron which will have become a beautiful golden yellow colour.

We mix a little more to mix everything together and after having buttered and floured our plumcake mold, we pour the mixture and place it in a preheated oven at 180° degrees for about 30-35 minutes.

Let it cool and then turn out our delicious Saffron Plumcake, decorating it as you like, we used icing sugar and dried saffron flower petals.
